reduced evaporation w/new hood?why?

Just got a new hood and my evaporation went from 25gal hr to13-15 per hr .what's up with that I have water drop let's all over the inside on ceiling and coming down the stack . Any thoughts on this . Thanks

Are there drain channels inside the hood around the bottom to direct condensate out a drain?

Sounds exactly like you are dumping condensate right back into the pan.

It has a drain channel but what temp should I keep it inside shack do the stacks need to be hot to draw the steam out and not dribble down the sides any thoughts

My hoods heat up to the point I cant touch them. Have you done some longer boils, say over 2 hours, where everything gets hot?

On wendsday c I boiled for10 hrs and went through135gal . But today was better but not much maybe its got to do with the aromatic pressure .my dogs say hey!!
