My delema

Well I live in mid michigan and we have had a amazing run in the last two days. In the last 24 hours I have gotten 198 gallons of sap out of 40 taps. I have a 2x4 divided homemade pan and arch burning about 12 gal/hr with the new blower. My delema is I work 24 hour shifts and I work tomorrow. Should I finish what i have now in the pan or leave the pans sweet for about 30 hrs and pick back up where I left off. It is supposed to be about 50 tomorrow.

Oh yeah is there a magic number to boil to if I do keep the pan sweet to keep it from going bad.
