We have had a recent cold snap and the sap has stopped flowing. I have about 40 gallon in a clear 55 gal drum. Until today it has had is on the top so I know it didnt get warm. I was gonna boil for about 6 hours tonight with what i got today and that other 40 gal but when I went to transfer it to my overhead I noticed it was alittle cloudy. I can stil see the bottom of the 55 gal drum through 40 gal buyt it is def not as clear as fresh sap. Do I dump it and wait to boil till tomorrow?

boil it. It may be a little darker than normal but I'll wager it'll still make good syrup.

Pale sap tastes a little fermented. When you boil it, it smells kinda like the inside of a tire, not that wonderful first of the year boil smell everybody loves.

If you lived near me I would have you bring it over here and I would boil it. I have boiled cloudy sap many times and made some great tasting syrup with it.
