Hmm very intriguing, i've made my own beer before but this takes it to the next level.

In 2009 I brewed a maple porter "baby brew" in honor of my youngest daughter. Brewed 100% with sap I collected, condensed about 30 gallons of sap down to 15, mashed and sparged the grains with it and boiled it for over three hours. After primary fermentation was done, I added a quart of homemade syrup to the secondary. It came out great, 10+ % abv. It's 3 years old now and aging like a fine wine.

A few things I would consider before brewing for commerial purposes.

Custom brew crafters about 7 miles from us has already produced a maple beer.

The nys department of taxation will now get involved since you would no longer be agricultural

Heavy regulations for alcohol where as maple is not heavily regulated.

Liability insurance!

Liquor license.

Zoning

Not to be negative but I would think long and hard about that idea.

Yes, that's gotten to be a big thing. You better have deep pockets, because it will cost you big bucks! Make sure you're ready for it and see about the market you would have. We have hops and can't even give them away!

I drink breakfast beer from Custom Brewcrafters (Mabel) and then take my nap.

But I am interested in growing hops and am about to harvest some black locust poles. Interested to hear that you can't give your hops away.
