3x10 vortex arch with max flue pans, revolution syrup pan and steamaway is finally ready to go. Arrived a lot later than I would have wished for and it has been time consuming getting it all set up. Will boil water tonight to clean it and hopefully all will go well! Temps shaping up for a big run tomorrow!

Will post pictures as soon as I get some good ones. It is really hard to take good pictures because the stainless is SO shiny!

Boiled on the new rig last night. Got the water from cleaning flushed out, filled it with sap (about 150 gallons) and started a small fire at 7:05. By 7:30 there was a was a roaring boil after one filling of the massive fire box. Drew off 2.5 gallons at about 10:30. Finished with almost 10 gallons of syrup at a little after 1:30. Our sugar content is very low this year, but pans are now very sweet, and I estimate we had about 1100 gallons of sap travel into the evaporator. It is amazing how hard the max flue pans and vortex arch boil. Had sap jumping 10 inches plus over the flues and a stream of condensate that was probably better than a gallon every 30 seconds coming off the steam away. Was on pins and needles all night trying to get used to it, and making sure I wasn't burning something. Got home at 3:30 AM as I made sure everything was cool enough to be safe to leave it. I was pleased with the rig- just wish we had better sugar content!
