I boiled 55 gallons this past weekend,made just over a gallon and my syrup turned out medium - dark colored. I was wondering if its the time of year, the sugar content of the sap?

It's more likely a combination of what the tree wants to give you on any particular day, microbial contamination and/or overcooking that caused the sugars to carmelize.
