View Full Version : Sweeten the Pans

I have a 2x4 pan.
If I get 30-35 gallons of sap.
How long would I have to boil this, to sweeten the pan, so the sucker wont freeze?
We can only get up to boil and finish batches on the weekend.
Appreciate the advice.

I had a 130 gallons into mine, and it still had ice on it two days later after a hard freeze. Nothing that would harm the pan though.

Is it a flat pan?

In my evaporator, the sap pan will freeze solid in a day or 2 if it gets real cold. The syrup pan usually only turns to slush.

yes, a flat bottom 2x4 pan.
I figure at 8" it holds 39.89 gallons.
So Im trying to figure out how sweet, what % of sugar the pan needs to be to not freeze solid enough to damage the pan.
