in going to set up an evaporator and was wondereing if i should get 4" pans or 6" deep pans:o

get 6" deep pans. i have 4" deep ones and wish i got 6". run them as deep as you can with out bouling over.

I agree , I tried 4" but switched to 6" much better

I'd say 6 inch in the syrup pan. You could probably get away with a 4 inch one if you use that pan more like a preheater. You don't want to run a pan deeper than half full if only because of boilups and overs. When I finish syrup on the stove I always use my deepest pans and always filled way less than half full. If you're running the sap 2 inches deep the extra pan depth in the sweeter pan wouldn't hurt, I'd think. Also a deeper pan will allow the pan to sit closer to the fire in something like a block arch or basic barrel evaporator.
