What is the best stuff to use to prevent the smoke within my concrete arch from seeping up around the pans?
Hard time finding insulating material.
My default for now has been Tinfoil ???

Thanks in advance.

With the limited information you have given, I would assume you need rail gasket. Here's a site to get it, I'm sure there are plenty more places too.

I get mine at the local Syrup store Bacon hill farms its about 2 inchs wide works great for stopping the smoke from coming up around the edge of the pan it seals the pan to the barrel stove and it just sets in there with the weight of the pan op this helps

I also use the 2" arch rail gasket like what Bascoms sells. I cur min in half (1" wide) because I'm a cheap Yankee.
You can also use little pieces of fiberglass insulation.

You also may want to increase your stack height. Normally, any leaks should suck air into the evaporator (as opposed to blowing smoke out)

I use "Fire Rope" it is the same gasket material used in woodstoves doors, you can find a variety of sizes in 3 foot lenghts @ Lowes for about $5
