I am back to winter.

Ended up Saturdat night with the pan, the preheater, and storage full of sap in the process,
when we froze up and now we are predicted to stay below normal for most of this week.

As long as we do stay frozen will there be any harm in waiting before firing up and keeping on just as if this
week never existed when we do thaw out?

When I am expecting a long stretch of below freezing, I make sure I just run the evaporator down as low as I dare so that the sap level is just barely above the flues (1/2" or so). Then I let it freeze up solid. The flues have enough flex so nothing seems to happen to the pan. I have been doing it this way for 20 years and so far, no problems.
