I'm a second year guy and noticed with my last batch that I had floating particles or residue in the top of the cans. I thought everything was supposed to settle to the bottom? Did I do something wrong? What is this left over stuff in the top of my cans? Any help is appreciated!

Troutman, did you run your syrup thru a filter? That may make a difference.

ha...of coarse I ran it through a filter sugarsand. You are a BIG help. A beginner over blocks especially needs to filter! I figured out it was butter that I used to take the bubbles down while boiling.

What are you using for a filter. Could be the butter your using for a anti foamer.Others have noted they used to much and it left a film on the top of the syrup. Have heard that even the anti foamer the big guys use can leave a film if they use to much of it.It might also be something used in the cans also.
