I ran my evap for the second time today for about 12 hours and I could not get a gradient going until I drew off a bunch then it went back to how it was before and I could not get the temp up high enough to drw off but on the upside the stuff a drew off came out to 2 or 3 gallons of what looks like to be fancy I will know for sure tommorow when I filter and bottle it and help would be greatly appreciated.

If it is a reversible flow evaporator, make sure you have the plugs in the correct position.

ALso, running too deep makes it difficult to develop gradient. I run my flue pan at 1" and my front pan 2"/

Need lots more info to help out. What size, style evaporator? What do you mean by drew off a bunch, then it went back how it was before. The more info the better. If you update you signature to show what your running it would be easier.

Thanks for the replies it has a 18x36 drop flue pan divided into 3 parts then it has an 18x18 undivided syrup pan the sap/syrup had gone all the same color throughout the evaporator so I drew it of until the new sap made the gradient.

One more thing the back side is like half an inch higher than the front

Make sure that the whole pan is perfectly level, that will screw things ups quicker than anything. I've never boiled on pans that small though, is it tough to get a gradient in something that small?

You can't establish the gradient if the pan isn't dead nuts level !

I straightened it out and just sat back and relaxed it is working great I almost got a draw but we were shutting down as it was getting to like 217.5-218 now after seeing how much heat I coming off the flue pan we want to build a steam away.

I was always told that the spot that you draw off from should
Be a hair lower. Is that correct?

Your pans should be level , as long as the gradient is working the syrup will run out !
