We have about 40-45 gallons of syrup in a 2'x6' oil fired finishing pan that we'd like to 'hold' for a few days before reheating and filtering? Is there any problem with this? The syrup is a medium amber now. Wondering if any extended air exposure will change the color.
Reason for the delay is we're waiting on the next shipment of bottles. Ideally we'd prefer to bring the syrup back up to temp, filter it, and bottle it. Alternative is we have to filter it and put it in a barrel, then when the bottles arrive again reheat the syrup to 180* and then bottle. Trying to save a step is all.
Any issues of holding the syrup for a few days before filtering/bottling?
