View Full Version : Finishing syrup with cream.

Good day folks,

A friend of mine says the old farmers down the street from him finish their syrup with heavy cream. The first time he saw it they had a batch finishing on the stove and when she said it was ready she dumped a cup of cream in. He thought she screwed up but she said it was how all the old timers do it. I guess it turned all gray and nasty and looked like nothing you'd ever want to eat, but then it calmed down and this cream came to the top in a semi solid state, she skimmed it off and the syrup looked normal. All the junk was in the cream. They do not filter at all as they claim the cream gets all the sediments out. He says they store it in the pantry and even a year old jug shows no evidence of spoilage and there is no sediment in the bottom.

These old folks have gone south now for the winter so I can't get the particulars untill they get back. I was wondering if any of you ever heard of this.

It might work, but it wouldn't be legal for retail.

I just had an old timer tell me about this last week when I was at the feed store. That's the way they clarified syrup when he was a kid. I don't know any more about it than that and what you've said but it was definitely something that was done in the old days both in your neck of the woods and mine.

I think re-useable pre-filter and filters would end up cheaper it you do more than a couple gallons.

Cheaper and safer too. Even if the neighbors claim it doesn't spoil, I don't know how much I'd trust even a little bit of cream mixed into something that could sit on a shelf for a year or more without any special canning technique like using pressure. But it's interesting to hear about old ways just the same.

Another thought is that it may make someone that is lactose intolerant ill if they eat some of that syrup. I wouldn't want the liability.

the key words here are the old folks and old days. today we use fllters and pre filters
