The king of Niter

Well on one hand it's the earliest I had trees tapped in CT 1/28. Completed my 3rd boil on Saturday and finished last weeks concentrate and Saturdays down to just under 2 gallons. That is unfiltered and loaded with niter. I was going to let it settle and pour off the clean, but I may wait til the warm summer months to reboil and filter thru the wool.

Sure seems like there's a connecton between ther abnormally warm and snowless winter's early sap flow and the niter. Any thoughts on that?

Seeing lots of niter in western NY too. With the extra light syrup I've been making, you can see niter suspended in the syrup during draw off. Going thru a lot of filters!
