question about stem hood on syrup pan

i have a stem hood for my syrup pan, i was just wondering if it makes a difference as far as getting gph if i have it on or of, im thinking about taking it off or elevating it was just wondering thanks.

By having a steam hood you will hold the heat and produce a better boil. Keep the steam hood on and seal it up so it can't pull in any cool air between the pan and the hood. Good Luck.
