what to stainl inside timber frame with

This is my first time posting.We are building a 24x24 timber frame sugar house and don't know what type of stain or sealer to use inside evaporator room. should it be food safe if condensation drips from beams? I would appreciate any suggestions. THANK YOU!!

If your cupola is large enough and you have solid wood roof (instead of slats under metal roofing) you probably won't have much dripping down. Yet and still I would not stain it with anything - I have not put anything on the inside of my shack which is all rough lumber and no problems so far. I am worried about mold which has started on the outside near the ground so I think I will stain to seal the outside, but i will not stain the cupola because of the same fears, good luck.

Thanks for the reply, I just thought it would be better to at least seal it with something. I plan on letting the outside to dry and weather a little til summer then seal it.

you could use Land Ark sealer. it is all natural and food safe.
i'm hoping to use it in ours this summer.
