I asked a very good chemist about boiling sap in aluminum. I give his answer here:

"The short answer is - get away from using Aluminum!!! Yes, it forms gels at the conditions you described! However, worse in my mind is the high probability of getting dissolved Al(III) in the syrup! This form of Al is digestible and its biochemistry is "impossible" to study because of poor analytical detection limits for it at biologically active (low) levels. Theoretically however it is a slam dunk that it interferes with the biochemistry of many essential trace nutrients: Zn, Fe, Ca, Mg, and others."

I think what he's trying to say is to use stainless steel, carbon steel or cast iron only. Aluminum cookware of any kind is suspected of being a health threat.
