where to mount thermometer

Hi I have a 2x3 flat pan with baffles just wondering should I put the leader thermometer in a fitting on an angle into the sap or straight in beside my draw off thanks in advance

I would put it straight beside the draw off. I did that on my last evaporator.

My evap has two NPT ports, I have two thermometers. One for each side. I also just bouoght a candee thermometer that I will attach to one of the pan partitians near the draw off.
