We have a leader wse evaporator the front pan(sap) measures 2x2 and the rear pan(syrup) measures 2x2 does this mean we have a 2x4 evap.
1, how much sap does this hold
2. how many gal per hour of sap can this boil
3. how do you cook with this evap. our old leader evap had plugs in the flues so you could hold the liquid and the last flue where the drain off valve was had the thermomter and you checked the sg with the hydromter. I dont know how to use this and they did not send any insturction other than how to set it up.
4. we are a park district and have about a 100 kids per day come for demo and field trips about 3 or 4 groups per day so we dont really make any syrup jsut demos I would like to make some syrup some day when there are no kids schulded. we have about 60 taps but could do more. thank you for any help.

I have this set of pans and measured that 15 gallons of sap gives you a sap level of about 1 and a half inches in the pans.
