Jim makes some of the best pans around. Im not sure on the evaporation rate of the V flue pans but I know he ran them on his personal evaporator for a few years. I have a 2x6 with his drop flues and the quality is better than you get from factory pans. It helps he is only 45 mins from me and I have seen him in action. I know that the V flue pans are not going to have as high a rate as a drop or raised flue, but the cost is a lot less also. Pm me with any questions.

Nobody here owns a set of these ?
From what I've heard you can't go wrong with Jim Schumacher's pans.
