hey all...question...how do you test for invert sugars? is it necessary for cream making?..

Here is a link to the Northern NY Agriculture Development Program. It includes links to a bunch of maple stuff. One of them is about testing for invert sugars. There are also bulletins about cream, candy, etc. The bulletins include tables that tell you which invert levels work best for which products. The test is quite easy to do. We do it all the time. Do you absolutely need to do it? No. You can get away without doing it, but you may waste your time using syrup that doesn't have the right invert levels, i.e. your product won't turn out right. Testing for invert sugar only takes a couple of minutes and in my opinion is well worth it.
