I am getting a quote on having a welded vee bottom pan made locally. What guage is best, is 18g to heavy?

welcome to mapletrader! i thinlk most pans are 22 ga. i would go 20 ga. thats what i plan on making my pans out of. 18 ga. will retain heat better but take longer to get to a boil.

West Mountain, how much do they go for not being made by a maple company? Are they considerably cheaper than a maple companies?

they are alot cheaper(in my mind anyway) than the phaneuf pans and thoes ones. but they are alson not nearley as nice but stull functional.
