I just installed a Leader dial thermometer with a 9" stem (the longest they have) on my new Phaneauf syrup pan. the notch on the stem is the depth they recommend. that would force me to run at 3.25 inches deep. Will I have a problem with that depth?

I also have a Phaneuf Evaporator. I purchased a thermometer with a 12" stem from Grainger. it has a 1/2" male fitting that I needed a reducer coupling to thread it into the 1/4" fitting on the pan
yeah, that is way too deep if you ask me. 1" would be good. I need to check mine. I have a Leader 2x6 with King Pans. I bought the 5" dial with 6" step. THe NPT port is at an angle on mine, so I will have to install and measure what my sap deth will be. IF its isnt 1", then I will be modifying it and making some kind of base that allows me to have the tip of the therm at an angle on one of the partitians

The angle of the fitting on the pan can be changed. When I bought a replacement front pan from Patrick I found that the fitting for the thermometer was horizontal and no way would the probe ever touch syrup. I called Patrick and he said to get a short piece of 1/4 inch NPT pipe and thread it into the fitting and just bend the fitting to whatever angle would work. I did that and it worked fine.
My Phaneuf syrup pan needed a 12" stem. I test fired it with 1.25" of water in it and the 12" stem therm worked fine. The one from smokey lake would be my choice!

Whatever happened to those thermometers that had a large range from 0-7F and I think maxed out at 10-20F. I find these newer therm.'s harder to read, and besides, if you're syrup's at 50F, then you're day is done.

Be careful... If you run too shallow the syrup will foam too much and jump off the bottom of the pan.
If you are running RO'd water that is 6-7 brix or more it will move a LOT faster then you are used too so run a little deeper to slow it down and be safer on your pan.
Work from a level you feel safe at and slowly back down to shallower if you want to find the right level for you and your equipment.

yep....Slow and easy is my plan Hobo. I've only boiled water in this new set up and the training wheels will be on for a while. the three inches I would have needed with the short stem is probably what I will run for awhile.
