I was in a restaraunt supply place and mentioned using a coffee urn for a bottler and the guy showed me a hot water heater they use in asian restaraunts mostly for tea water. Has or does anyone use one of these for a bottler?

Its electric for a countertop and looks just like a 60 cup coffee pot, except he explained that a coffee pot has an element in the center and can burn things, These have the whole bottom plate that heats evenly, has a dial for temperature adjustment from 110 deg to 205 deg, and a spigot like a coffee urn. None of the guts a coffee urn has and doesnt percolate. sound like it would work?

This isnt the one I was looking at but same idea, if the link works. The one I was looking at was 149 bucks which doesnt seem like too much to take a chance on if it would work. Stainless too.

It will work, but even though it has the element in the bottom it will have local boiling on the hot surface. The best bet is to use a water jacket so the element heats the water directly, not the syrup. If it hisses when it is heating up, you are probably making niter.

I'll second John's comment. If it's hot enough to raise the temp of the whole pot to 190, then the interface between the heater and the syrup will have to be much hotter. It will make nitre.

People buy water jacket canners because they're tried and true and work. If there was a cheaper way the water jacket makers would be out of business.

Seven Creeks I just picked up this water-jacketted Coffee Urn for $295. It holds 6 gallons total in two 3 gal liners.
This one is an F-100, made by Cecilware, and can be changed from 3 phase to 1 phase by moving a few wires around. I spent some time looking at gas fired bottlers, but the idea of a water jacket made too much sense to pass up.
Keep looking, some have found them for as little as $50, I wasn't so lucky but the clock is ticking....5239
