Its not a matter of how large an amount of sap you can boil, its a matter of how long do you keep whatever amount of sap you have before boiling. If your going to store sap, meaning your not going to boil it shortly after collecting it, running it through a UV light will kill some of the bacteria. It improves sap quality, which improves syrup quality. Now with that said, all UV lights are not the same, and ones designed for water purification will not kill all the bacteria like a sap-only unit will. (The only unit that kills all bacteria, as I have been told, is the unit Oesco Inc. sells)UV light rays cannot travel through sap like they do water because of the sugar, so your home water purification style units are limited in the amount of "kill" they can acheive. The North American Maple Producers Manual covers UV light usage. Basically, if it might help your sap quality if your storing it, why not use one?

Well after too many interuptions or delays in boiling and dumping far too much value in spoiled sap, we bit the bullet today and
got a SapSteady.
The factor that really pushed the go button was that my wife can haul in sap during the day, run it through the UV and I can go to work, and boil a few days later.
When I looked into getting smaller UV systems, it would take serveral to get the effectiveness of the SapSteady, take more room in the sugar shack and cost more overall.
One lesson I've learned in life, ( I'm in the machine tool business ) is that you seldom regret getting the best and frequently end up losing time, money, and effectivness by going the cheap route. We'll see how this fits.

I was wondering why you wouldn't boil your sap the day it ran . Then I noticed the size of your rig and your number of taps , quite a discrepency there . I know people that do 2500 - 3000 taps with your rig and a bigger R.O. . Would there be some expansion plans in the future ?

If this question is for me. I have a day job. Actually, it is my business. Taking 3 - 4 weeks off is not good. So I'm hoping to boil every other day or maybe every 3rd day.
