If you want to get 20-25 gallons of syrup you're going to need a bigger boat. Your 2x2 gives you around 4 gal/hr. At an average of 40:1 sap to syrup, you're looking at 10 hours of boiling for every gallon of syrup you make. That's 200 to 250 hours on that 2x2. I don't think you'll have enough storage or hours in the day.
If you add another 2x2, you cut that time in half with the same size fire. That's still a lot of boiling, but it could still be humanly possible. I'm amazed at what some folks on here bang out on a Half Pint or 2x4.

It's possible IF you have a high sugar content. I regularly made around 20 gallons on my 2x4, But my sugar content usually runs around 3-4% Still makes for long weekends:)
