I am kinda stuck into using a 2' x 2' flat pan this year due to finances. My sugar house construction set me back enough for this year! I am wanting to build a 3' x 3' hood with a 6" pipe that goes straight up and out the roof. I would also like to keep the hood about a foot and a half over my pan. Will this work? Will it work as good as a cupola?

I built my own hood out of coil stock and made the pipe square instead of round. It works good. the hood is suspended with damper chain and I can adjust it for height if I want to but never have. It is about 18 inches above the pan and takes the steam out well.

So how much bigger is the hood compared to the pan? How big did you make the square pipe?
