It is possible to put a Max set of pans on a traditional wood arch? I've heard I need to get an Inferno Arch for these pans.

You may not get the same level of performance as the Inferno, but it is possible. As long as you had a large supply of forced draft and a well insulated arch the max pans would still boil sap and better the output of standard pans. A really hot fire and good insulation is the key. You want every ounce of heat you can produce to stay in the arch and go in between those flues. Make sure your insulation, firebricks, archboard- whatever you have under the flues, goes up pretty close to the bottom of the flues so you force all your heat through your pan. It takes a lot of heat to make that max pan work well.
