4884I plan on adding on to my pole building for sap cooking. I am wondering about venting off the steam. I plan on adding a 24" by 48" vent above the pan. Seeing that I don't have a gable roof on this because it is a "lean to" type structure. Will this cause a venting issue? I am a hobby sapper and only have a 24" x 48" pan for cooking.

My shack is of a lean-to design. I added windows at the top of the high side and opened during boiling, seemed to work well for my small rig ( 2x2 barrel arch). Loved the improvement of being under cover as well. Much nicer that the middle of the driveway block setup I had when I first started ! If I go with a larger arch I may just add a hood to help move the steam to the windows...

Another note, enclosing the shack on all sides really helped my boil rate and those late night boils ( boil is always best after 10pm where I am ) were much warmer !

My shack has one side of the roof a lot longer than the other and has an opening on the end of the shack close to the chimney. This lets a lot of the steam out in all but the fastest of boils. May consider a steam hood if I get a more efficient pan. smokyamber is right when he says being inside is the place to boil. cvmaple

I have a Grimm 2x6 with a steam hood, without that the structure would have fallen down by now!! hahaha Anyways I don't have a steam hood for my syrup pan which is 2x2 and I need one because after I tested it with water I realized that I need a steam hood. I installed a vent directly above it but that is not enough. get either and exhaust fan that is strong enough to vent the steam out or a steam hood.

I think you're right, an exhaust fan is a must for me, no hood. Thanks!!
