Poured slab for sugar house this week got everything pretty much figured for the rest of it except for the stack exit. 2.5 x 8 evap. not sure how big to make copula or if i should run my stack out the copula or the roof. Any advice would be great

Well I have a couple of thoughts. For coupola doors, they should be at minimum the length of your pan. I have a 2x6 evap, so my vents/doors of my cupola are 6 feet long. I think 6 foot doors would be OK on a 8 foot evap too.

As for the stack, you don't want this going up to vent out of your cupola. Its really not safe. If you get the fire going good, you could be throwing some ash out the top that you don't want anywhere near your structure. Best is to pipe it just like you would a wood stove...up through the roof using metalbestos or stainless steel stack with a roof jack and the proper clearances on each side of the stack. I transitioned from regular stainless stack to metalbestos to go through my roof, just to be safe.

was really thinking going threw the roof of the copula not actually venting it out the doors that would be one hell of a fire.

The sq footage of the cupola vents should = the sq footage of your flue pan. For your 2.5x8 that's 13 or 14 sq feet, though it's probably a good idea to go larger for when you swap out that 2.5x8 for a 3x10...

The new sugarhousae that I plan on building will have stack out and maybe a coupola just for looks. With steam hoods there seems to be no reason for a coupola.
