I was looking for a good side dish the other night to go with my Pan seared slow cooked Pork Chops and Mashed Potatoes when I sliced up some fresh carrots and slow simmered them for a while. When they got soft I hit them with a little butter, garlic, salt and pepper and then about 5 tablespoons of Med amber from last April 15th! I brought it back to a slow boil and they glazed on real nice. They came out beautiful and really impressed the wife. Maybe I can get her to do some canning for me this year.... :wink: :wink:

(oh yea,.....I kind of hit the pork chops with some med amber also..)

MaineMapleDave's Maple Dill Glazed Carrots:
2 Pounds carrots, peeled, sliced on the diagonal and blanched in boiling water 3 minutes.

Melt 2 TB butter in saute pan, add the carrots and cook for a couple of minutes.
Add about 1/4 C maple syrup, 3 TB chopped up fresh dill and mix it all up. Simmer for about 5 minutes--the butter and syrup will make a nice glaze.
