We are building a new sugar shack and are interested in what type of material everyone uses in their evaporator room. We would like the "natural" wood look but are not sure what type of wood to use. Any suggestions are appreciated! Thanks.

I used rough cut Hemlock from a local sawmill. Turned out nice.4851

We insulated and then used 1/2" plywood and painted it white. Not the natural look but nice and bright and easier to clean --- just another option to consider.

As a food service building which the it is deemed by the state here, once you are licensed, the bottom 4 feet has to be washable such as a high gloss enamel or the same 4x8 sheets of white hardboard used in milk rooms. Under that I have 1/2 inch plywood, and over the 1/2 plywood on the upper 4 foot is tounge and groove cedar, again varnished with a high gloss.

Do you have the info of the sawmills in Ohio where you got the hemlock and pine? We are located in central Ohio. Thanks.

As a food service building what do you do for a wood floor? Concrete floor wasn't an option where my shack is. My floor is 3/4" plywood subflooring.

In Minnesota the inspector was fine with 3 coats of polyurathane on the floor.
It has to be washable.
