I don't have a infrafed temp reader, but curious if anybody has ever taken a temp of the side of a pan while boiling?

It will be the same as the liquid in it.

infrared thermometer (non- contact) need to be calibrated for the type of metal you aim to. We used them in chemicals electrolysis cells, and if you aim on shiny titanium parts, temperature reading is different that just close steel parts. if you want to used on pans, you have to choose a target, compare whit exact liquid temperature and keep the same target after. some "guns" have the emmissivity adjustable for this.

it won't be more than the liquid in it...in our case approx 212*-220* depending where you measure the temp.

I was pretty close then, forgot to take into the consideration for the cold raw sap entering, in your case section 1. but a good read none the less. but then again anything involving maple is a good read to us I guess.
