It's good, but tricky to make. I'd recommend using nothing darker than a lighter dark amber. The darker stuff tends to get too strong of a flavor, IMO.
To make, you want to cook it to 235-237, pour it directly into jars, and get it freezing cold as quickly as you can with as little agitation as you can. This stuff is just waiting to crystalize, and when it does, the entire jar will turn into rock candy...I typically get a 15% of the batch like this by the next morning. I put it in the freezer after it's jarred. After it's cold, it's generally pretty stable, so long as it's kept cold...turns it really thick so it can't move too much.
Good luck.

I once made toffee by accident and have xperimented to duplicate several times.
This worked, take the syrup to 280 then add butter. You will get alot of thick bubbles so use a low heat or it will burn. The toffee is ready at 300 degrees. I like to add fine chopped walnuts at this point. Quickly pour onto AL foil for a thin layer.
Far an added treat dip in chocalate, yumm!!
