steam hood

Does anyone know if a steam hood works best directly over the pan? The one I made is about 2 feet above it and wasn't really pulling the steam that well. However, the wind was also blowing at my vent pipe, destroying any draft I may have had created. I can add side skirts to bring it down closer if necessary.

They work best with it down on the pan/pans. However make sure you provide access to keep track of what is happening and tent the pan. I made my hood with a sliding door on each side.

Thanks. I guess I had better install the skirts then. I'll be sure to make a door on the front as well.

If it is not on the pans, you need a lot larger stack to pull the steam draft correctly. :?
