coating candy in crystals

Does anyone know anything about coating your candy in crystals. I was wondering where you get the material and what it is?

The candy is soaked in dense syrup for 6 hours. Theres a document on the Cornell web site.

Look at page 86.

I haven't done it yet. It adds at least a day to the preparation, takes a lot of labor, and it uses more syrup. I've read somewhere "coating" syrup can only used about three times. Then it can be used to make candy or cream, I think.
