Another option is to print out this brochure (http://www.nnyagdev.org/maplefactsheets/CMB%20207%20Granulated%20Maple%20Sugar.pdf) from Stephen Childs at the Cornell University Maple Program. I plan to try this out the next rainy weekend myself. Good luck.

Did this for the first time the other night... heated syrup to 260 , removed form heat and started stirring with wooden spoon... eventually ( tired arms ..) it turned to sugar. Pretty cool how fast it went and now I have a use for my socks flavored syrup ( another story involving wet wool filters...).

If you are planning to sell your sugar after it is made I use an old flour sifter to run the sugar thru so all of the granuals are the same size it looks good to the public instead of having it lumpy
Our first sugar was made by not paying attension to the temp for making maple cream so it ended up as sugar I ordered the 4oz shakers from bascoms and labled it as OS Suger OS stands for Oh S*^% It sold sold so well that the next batch we called it OP Sugar for On Pourpose. All of my costomers got a great laugh that year and some still ask if we have any OS Suger every year
