Yes but how many maple guys have 3 phase in their sugarhouse? I think not many if any.

Right you are, 3rdgen.maple, an "add a phase" inverter would cost more than just finding a single phase motor unit.

Is a good looking unit though, maybe I could find a single phase motor to match and spend a bunch of time changing it out. End up with a 3 phase motor and a working fan unit I don't even need.
It's a long way to syrup season, I will be crazy before it gets here !!!

If you are able to find one, I used a friends Simplicity garden tractor blower for the cart model. I have seen them run off belts or their own 3hp or so engines. When I built my arch I tried a Jenn air cookstove blower on my first test boil of water. When I read a couple more posts about AOF I took this blower mounted a 110 1hp motor to the thing and have not thought about changing. I have AUF with eight 3/8ports for AOF. The boil is insane when the blower is turned on.
Nice part, 2 quarts of syrup sealed the deal for the blower.
If interested I have another one that came my way.

Never seen a 1/3hp 3 phase motor before.
