Hi everyone, First time on this site. I was wondering why the maple butter I made this morning looks like it curdled. I used the same process as I have in the past with all fresh ingredients. Any thoughts?

You did not cool your syrup enough before you stirred them together.

yeah then the cream separates out and then re cools and can get chunky like.
