View Full Version : I was making sugar bricks last night

When i poured them I had an unusual reaction to say the least.The syrup bubbled up and out of the mold,then shrank down.Almost like the reaction when I make my sea Foam and add the soda.
Any ideas why it happened would be helpfull.
P.S. the sugar bricks turned out perfect.

What temp. did you take the syrup to. It sounds like you were in the 252 plus range. If so, you are in the range of granulated sugar and that is exactly what will happen when you make granulated. If your temp. was lower, I don't have a clue.
