This last season I typically just mixed all my sap together and boiled it down, however I did manage to make a batch from from only red maple sap and a friend of mine who is highly sensitive to all other pure maple syrup was very excited to learn that he muscle tested very strong for the syrup made from red maple! (Muscle testing is a holistic approach to testing for allergies.)
Does anybody know if there is really any medical or scientific truth to my friends discovery or is there anybody else out there that found this to be true?

No, never heard of that before.
All I can say is the holistic folk's money is just as green as everyone else's. Maybe you've found a new market.

Yes, that's right, he is not allergic to the syrup I made from red maples!

I have difficulty following how that works. Syrup, whether made from sugar maple or red maple, would have the same composition as a finished product. What typically varies is the original sugar content of the sap and the length of the season between maple species.

I don't really understand it either, that's why I'm asking if anybody knew anything about it. (medical or scientific?)

I'm not sure of syrup but for most foods in a raw form they hold a specific organic make up of proteins and in raw form a person can be allergic to them like me. Once you cook that food the proteins are changed and the person can be no longer allergic to it.
I'm allergic to every thing in the state of VT plus dogs and cats, thank god not syrup but the pollen from a maple tree does wonders on me
like right now just ate a salad my ears and back of throat are itching, not sure what in the salad is doing it, but had a salad the other day and I was fine. If I had cooked it all then made a salad no problem.

Yeah that would be great if there was some absolute medical/scientific truth to this!
I'm sure that it must be the opposite for some people though.

My guess is that he was more likely allergic to the defoamer in whatever he tried before. Maybe he got a batch with lard, nut oils, bacon fat or whatever. Unless maybe Tim can contribute something more scientific, I doubt it was the difference in the trees.

Very good thought since I don't use defoamer or anything as "defoamer"!

no it was RO'd from some place North of me:D lack of maple flavor made my mouth itch:lol::lol:

I say make some from only sugars next year and have him try that. Being allergic to maple syrup sounds like a real curse. Your processing technique is likely the key here, not the tree type.
