Can you make cream or candy fron Grade A dark? Every time I bottle, what won't fill a full bottle, keep adding to a mason jar and keep it in the frig for myself. I have over a half gallon now and would like to try making some cream. Would this work? Thanks. Dan.

yeah, it will just have a stronger flavor.
I prefer candy made from dark amber.

It may or may not work depending on the invert sugar level. Dark amber often has higher levels of invert sugars that prevent it from crystallizing properly.

We make molded sugar from A dark, B and even C (good flavored C only) It comes out good. In fact we prefer the A dark, nearing B and B best. The light has too little flavor in our opinion.

I have made cream with dark amber and it came out great. It tastes better than the cream made with light syrup.

I have never had a problem with crystalization and the stronger flavor is addicting LOL just ask my customers.
