Cleaning soot?

I just purchased an evaporator and wondering if I should use oven cleaner to clean the soot from the underside of the flue pan, or just pressure wash them? If anyone has other methods please let me know.

As long as its stainless...easy off with pressure washer works great.

Does it help with the boil to clean off the soot?

oh yeah!!! I see a difference between the begininng of the season and the end of of the season and I brush the flues before every boil.
