View Full Version : Is darker syrup sweeter?

I know that all maple syrup has the same sugar density per volume. It is my understanding that lighter syrup has a higher percentage of Sycrose. Darker syrup has a higher percentage of Glucose and Fructose. I read an article today that said that fructose is percived sweeter than sucrose. http://www.nytimes.com/2011/04/17/magazine/mag-17Sugar-t.html?_r=4&pagewanted=all
So could it be true that we percieve darker syrup to be sweeter then lighter syrup?

Different sugars rate differently on the "sweetness" scale. The amount of invert sugar (fructose and/or glucose) in syrup does vary some, but not a huge amount (normally within a few percent), so the sweetness doesn't change all that much. Dark syrup is sometimes perceived as less sweet however due to the fact that there are several other flavors besides just sweet.
