I know that all maple syrup has the same sugar density per volume. It is my understanding that lighter syrup has a higher percentage of Sycrose. Darker syrup has a higher percentage of Glucose and Fructose. So could it be true that we percieve darker syrup to be sweeter then lighter syrup?
