View Full Version : Water Jacket Canner for BBQ

Can the water jacket canning units be used for making BBQ sauce or maple mustard? I've burned two batches of mustard in my direct fired canner/finisher. I'm figuring it's the direct flame that is the problem.

To bad about burning the batches:(
Are you saying that the syrup is scorching when you try to elevate the temp to maybe 240?
My propane caner has a lot of heat and if turned up on high can scorch a small batch pretty easy.
I usually heat the syrup [about 3/4 gallon] on a electric stove and in a deep pan.

Hey Chris! Batch was of everything, not just syrup. It just seems to char on the bottom in a ring pattern of black soot. It doesn't ruin it. Just extra smokey flavor!

Nate,
Try this.
We heat just the syrup only.
Remove from the heat.
Add the other ingredients
Mix well
Can in to the final containers while warm.
My guess is that the mix is way to dense to get to 240 and that's why it scorches?
