I'm having trouble re bottling some extra light syrup to enter in a local competition and need some advice. I understand that syrup will darken every time you reheat it but these are my questions;
Does it still darken if you only take it to bottling temperature?
Does colour change vary if you reheat fast-n-furious or slow-n-gentle?
If minimum heat is the way to go would I still be able to get it through a cone filter at 190 degrees?
I've tried twice now and both times I ended up grading exactly on the line between extra light and light once I got it in the competition bottles. I have enough for one more try and feel it's too close for comfort so any advice is appreciated.
