I was looking thru the sales catologs at new evaporators, and noticed some of them are drawing from the middle of the arch where the heat is more intense. Would it be possible to rotate my pan on my 2x8 by just extending the plumbing so that I could get more heat to the syrup section? It seems like eternity till it reaches up to temp.I'm sure this has been brought up before somewhere, but I couldn't find it. what's the pros & cons? Thanks:)

Not all pans boil the same. Mine boils the hottest right at the end of the arch at the draw off. My old 2x8 did draw off in the middle. Thru the flue pan into the one side of the center finish pans thru into the second flue pan then back into the center finish pan draw off right next to the sap intake flue box. Old style I like it.

Mine seems to be hottest in middle, So if I try this the only thing I would be out is some plumbing, And I could gain faster boiling. Right?
