Stainless is easier to keep clean and shinny. When I bought my new setup about 3 years ago I went stainless with everthing possible except my hood. Yes I saved some $ but have said it would be nice to have gone stainless. The aluminum will turn a dull color over time and I have some stain lines that are from constant dripping above.
But the bottom line is that they both will do the same thing.
I could probably get some type of cleaner to shine mine back up but i just use water from the condensate.

You probably can find an Amish or local tinsmith or fabrication shop to build you a stainless hood for way less than what evaporator companies would charge for aluminum. Spent the extra $$$ and you won't be sorry. :D
